The way to find out if gluten is the problem is simply to avoid eating gluten for a minimum of two weeks or longer. If you notice an improvement in your symptoms, then gluten is aggravating the problems you're already experiencing.
Rice is not your only option either. Check out the different grains that are gluten free grains in the bulk foods section of your grocery stores. As already mentioned, rice is one of these. Just don't use glutionous rice, that's all. Wild rice, millet, quinoa (find useful cooking information and recipes for quinoa on care2.com under healthy living, then use key words to find the information about quinoa. Annie has some very good information about quinoa), amaranth, and teff are all options for a gluten-free diet.
Have you already had the surgery? I do know of someone who is a long time survivor, and he is doing very well after many years.
